Powder: Very fine, and extremely fast to dissolve -- however, is so fine that it is prone to clump together in hard "pellets" that need to be broken apart so they can be measured properly. Definitely the better option for people making their own skincare products.
Flakes: Much more coarse, and similar to salt crystals -- doesn't clump together like the Powder, making it slightly easier to work with -- can take a bit longer to dissolve. Some believe that the larger crystals make it more "natural" or bio-available, though that cannot be proven scientifically.
